My contribution to Easter Brunch. . . and one of my faves:
Ingredients:
6 eggs
1 c. cottage cheese
1/4 c. oil
1 3/4 c. buttermilk pancake mix
12 oz. grated Monterey Jack cheese
1 pkg. little smokies
Directions:
Beat eggs 'til frothy. Stir in rest. Bake in greased 9x13 pan (25 - 30 minutes) until golden brown. Serve with honey or syrup.
